Basic principles and facts related to carbohydrates, fats, proteins, vitamins, minerals, and water are provided in the context of promoting health and preventing disease. Current topics such as world food problems, cholesterol, obesity, and vegetarian diets are also considered. The course is intended primarily for Hospitality students. Prerequisite: None (3: 2, 3)
